Mindful Meter is a watch app that lets you quickly record your minutes spent mindfully engaging in various activities, such as thankfulness, insight (e.g., reading), meditation, exercise and service. You can also switch the mindful meter to only track gratitude, if you only want to record thankfulness. You can add a complication to your watch face that shows the status of your mindful minutes (or just your gratitude) compared to a daily goal you set. The number of minutes shown gradually decreases during the day, so when the complication shows a low status you can be reminded to engage in additional mindful activities to keep meeting your daily goal. When you enter you mindfulness activity, if you select "Other" and manually input an activity, that added activity will be added as an option for that activity (and if you later want to delete that option, swipe left on that option to delete it).
